I know I have to stay with the stock wheel diameter, offset and rim width, but what about tire size? If the car came with 185/65 tires can I use 190/60 street tires and still stay in stock? Of course this is just an example; the Sti would look pretty silly on that size.

Any DOT approved tire that you can fit on the stock wheels is legal.

Any tire that fits. It's not supposed to rub or stick out, but don't expect a lot of comment about that locally.
You get a 1/4" allowance on wheel offset.

For STi's, 245's are the most common choice in A Stock. A few folks are running 255's, and Larry Fine actually managed to squeeze 275's under the fenders in front. (It took the Kumho guys a good hour to get the 275's mounted on the stock Subaru wheels!)

Don't think I've ever read that...is it actually in the rules? After BFG got out of the market, the only option for the 2.5RS were 225 Kumhos...and they rubbed.
Besides, one way or another it WILL eventually stop rubbing...

So you don't remember the big uproar caused by the fact that the STOCK tires on the Fiero stick out? Aftermarket tires that stuck out were being called illegal, but the orginal tires stuck out. I can't really recall how Denver resoved it.
I know that Met Council rules always said tires should not hit the body or chassis under any condition of lock or rebound. I realize that Met Council prep rules have pretty-well been superseded by the SCCA Solo (previously "Solo II") rules.
